Feta Chicken Breasts

- 1 pkg (1o oz.) frozen chopped spinach,thawed shopping list
- 8 oz feta cheese shopping list
- 1/2 c lt. mayonnaise shopping list
- 1 clove garlic,finely chopped shopping list
- 6 thinly sliced boneless,skinless chicken breasts,about 4 oz. ea. shopping list
- 1/2 tsp paprika shopping list
- 6 slices bacon shopping list
How to make it
- Heat oven to 325 degrees. Place rack in large baking pan.
- Drain and squeeze liquid from spinach.
- In medium bowl,combine spinach,feta,mayonnaise and garlic.
- In batches, place chicken breast between sheets of waxed paper and pound to 1/8" thickness. Place about 1.3 c of filling down the center of each chicken breast. Roll up and secure each with 2 toothpicks
- Sprinkle with paprika. Wrap a slice of bacon around each piece of chicken and place on prepared rack
- Bake at 325 for 55-60 mins or till chicken is done . Run under broiler for a min. or two if desired.
