Grilled Chicken Caesar Salad Light

- For the chicken: shopping list
- 4 (4-ounce) boneless skinless chicken breasts shopping list
- 1 teaspoon italian seasonings shopping list
- 1/2 teaspoon salt shopping list
- Freshly ground pepper shopping list
- For the crouton: shopping list
- 2 slices French bread, crusts removed and diced into 1/2 inch peices (about 1 1/2 cups) shopping list
- 1 clove garlic, pressed or finely minced shopping list
- 2 teaspoons extra virgin olive oil shopping list
- For the salad: shopping list
- 12 cups romaine lettuce, washed and torn or sliced shopping list
- 1/2 cup shredded parmesan cheese shopping list
- For the Creamy Caesar Dressing: shopping list
- 1/3 cup reduced - fat mayonnaise shopping list
- 3 tablespoons fresh lemon juice shopping list
- 2 teaspoons worcestershire sauce shopping list
- 1 teaspoon extra virgin olive oil shopping list
- 1 teaspoon anchovy paste, or 2 anchovies in oil, rinsed and smashed into a paste shopping list
- 1 teaspoon Dijon mustard shopping list
- 2 medium cloves garlic, pressed or finely minced shopping list
- 1/4 cup parmesan cheese shopping list
- 1/2 teaspoon salt shopping list
- Freshly ground pepper shopping list
How to make it
- Prepare the dressing: Whisk all the ingredients together in a bowl. Set-aside.
- Prepare the croutons: Heat the oven to 350 degrees F. Combine the olive oil and garlic in a large bowl, add the bread cubes and toss to combine. Place on a cookie sheet in the oven and bake, stirring occasionally, until toasty and crisp, about 10 minutes. Watch them so they don't burn. Remove from oven and set-aside.
- Prepare the chicken breasts: heat the grill to high. Season the chicken with the Italian seasonings, salt and pepper. Grill on a lightly oiled grill until cooked through, about 3 - 5 minutes per side. Remove and set-aside.
- Putting it all together: Combine the lettuce, Parmesan cheese and dressing in a large bowl. Toss well. Divide to individual serving plates. Slice the chicken and place on top. Add croutons and serve.
