Banana Coconut Bread

- 1 1/2 cups unbleached white flour shopping list
- 1/2 tsp salt shopping list
- 1 tsp baking soda shopping list
- 10 tbs unsalted butter, softened shopping list
- 1/2 cup sugar shopping list
- 1/2 cup light brown sugar shopping list
- 2 eggs shopping list
- 3 or 4 ripe bananas, mashed, 1 1/2 cups shopping list
- 1 cup shredded unsweetened coconut shopping list
- Variation: Substitute 1 cup chopped toasted walnuts or pecans for coconut shopping list
How to make it
- Preheat oven to 350 degrees. Grease a 9x5-inch loaf pan.
- Sift flour, salt and baking soda together. Cream butter and sugars together until light and fluffy. Add the eggs 1 at a time, beating until mixture is smooth after each addition.
- Stir in bananas. Add the dry ingredients and all but 2 tbs of the coconut and mix until blended.
- Spread the batter in the pan and bake for 60-70 minutes. Sprinkle bread with the reserved coconut halfway through the baking. The bread is done when a skewer inserted in the center of the loaf comes out clean and the bread is a golden brown.
