How to make it

  • FOR CAKE
  • Preheat oven to 200°C. Line a loaf tin.
  • In a large bowl, use electric beaters to combine the butter and sugar. Add egg and mashed bananas and beat until combined.
  • In another bowl, combine flours and baking powder. Gently fold flour mixture into the banana mixture then add milk and fold to combine.
  • Pour mixture into the loaf pan and bake for about 45 minutes, until a skewer comes out clean.
  • Stand cake in tin for 5 minutes before transferring to a wire rack to cool completely.
  • FOR ICING:
  • Combine butter, milk and milk powder in a small saucepan and heat, stirring, until butter melts. Add in sugar and chocolate and continue to heat and stir until its all smooth. Remove from heat.
  • Place about 1/3 cup icing sugar in a small bowl. Add enough of the saucepan mixture (like a tablespoon or so) to make a smooth paste. Return this mixture to the saucepan and repeat with remaining icing sugar (may need more or less, I didn’t measure) until you have a smooth, spreadable icing.
  • Spread icing over cake when it’s cooled and top with some chopped walnuts.
