Phyllo Wrapped Salsa Steak

- 4 beef tenderloin steaks shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1 teaspoon olive oil shopping list
- 4 green onions shopping list
- cooking spray shopping list
- 12 sheets frozen phyllo pastry thawed shopping list
- 4 whole mild green chili peppers shopping list
- 11 ounces chunky salsa shopping list
How to make it
- Butterfly the steaks then sprinkle cut surfaces with salt and pepper then reclose steaks.
- Panfry steaks in the oil over medium high heat for 1 minute per side then remove to a plate.
- Cut white part off each onion and halve lengthwise.
- Cut the green of 1 onion top into 4 lengthwise strips.
- Preheat oven to 375 then lightly coat a baking sheet with cooking spray.
- Place 1 sheet pastry on a clean dry flat surface.
- Lightly coat pastry sheet with cooking spray then fold in half lengthwise sprayed side down.
- Place 1 steak in center of sheet.
- Insert 2 white pieces of green onion, 1 chili pepper and 1/4 cup salsa inside steak.
- Fold pastry over forming a bundle then coat with cooking spray.
- Place another sheet of phyllo on the work surface and coat with cooking spray.
- Top with a second sheet of phyllo and spray again.
- Place the steak bundle in the center of the stacked sheets and gather them around the bundle.
- Gently press it together in the center so that the bundle resembles a sack tied in the middle.
- Tie a green strip of onion around the gathered part of the bundle then serve immediately.
