How to make it

  • Cucumber Mint Salsa
  • 1 medium cucumber, skinned, seeded, and cut into 1/4-inch dice (about 1 cup)
  • 1/2 cup finely chopped red onion
  • 1/2 cup finely chopped flat-leaf parsley
  • 2 tablespoons finely chopped fresh mint
  • 1 small jalapeno, stemmed, seeded, and finely chopped
  • 3 green onions, bulb and stem, finely chopped
  • 1 lemon, zest and juice
  • 2 tablespoons sherry vinegar
  • 1 cup olive oil
  • Mix all ingredients by hand and refrigerate until ready to use. Do not make more than an hour before serving or cucumbers will get soggy
