How to make it

  • Melt butter and add flour. Cook, stirring constantly, until you get a good caramel color.
  • Add vegetables and saute until tender.
  • Add cream of mushroom soup and cook for about 5 minutes. Add crawfish tails and cook for 5 more minutes.
  • Add salt and pepper to taste and serve with crackers and chips.
  • Note: This will be quite thick, but Charles notes the longer it cooks the more the water will be released and the mixture will become thinner.

    This sounds good. Note- If you cook to a thinner consistency you have Etoufee, as this is the Cajun word for smother or what we call gravy. \0
