Orange Muffins Recipe

These muffins are like biting into sweet sunshine ~ I'm sure you'll love them!

- 1 whole orange, washed but unpeeled (stem end button removed)
- 1/2 cold (straight from the fridge) butter
- 1/2 cup orange juice
- 1 egg
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch salt
- 1/2 cup raisins
- 1/2 cup chopped dates
Directions
- Preheat oven to 350F.
- Cut orange into 6 sections and chop fine in the food processor.
- Cut butter into 6 pieces and add to food processor along with orange juice and egg. Pulse until butter is the size of small peas.
- Add all dry ingredients and pulse briefly just to combine.
- Stir in raisins and chopped dates.
- Spoon into greased muffin tins and bake for 15 to 20 minutes.
- Makes 14 muffins.
