Baked Salmon Dijon

- 1-1/2lb of salmon fillets, partially sliced down center - not all the way through (either 2 large fillets or 4 small) shopping list
- 1/2 - 1 cup sour cream (may use fat free) shopping list
- 2 tsp dried dill shopping list
- 3 tablespoons scallions, finely chopped shopping list
- 2 tablespoons Dijon mustard (I used Grey Poupon) shopping list
- 2 tablespoons lemon juice shopping list
- cooking spray shopping list
- 1/2 tsp garlic powder shopping list
- 1/2 tsp black pepper, or as needed shopping list
How to make it
- Heat oven to 400. Thaw fish if needed.
- Whisk sour cream, dill, scallions, mustard, and lemon juice until blended.
- Spray 3qt casserole dish.
- Place salmon, skin side down, in casserole. Sprinkle with garlic powder and pepper then spread thickly with the sauce. (If using 2 large fillets, you'll have sauce left over.)
- Bake salmon until just opaque in center, 20-25 minutes (or longer if using larger fillets).
- Tasty!
