Creamy Cranberry Fool

- 1/2 (12oz.) bag fresh cranberries shopping list
- 1/3c. orange juice shopping list
- 3/4c. superfine sugar shopping list
- 1-1/4c. whipping cream shopping list
- Grated orange zest, additional fresh cranberries to decorate, if desired. shopping list
How to make it
- In a saucepan, combine cranberries, orang juice and sugar. Simmer about 10 minutes, until berries pop; cool.
- When cranberries are cold, using a wooden spoon, press through a fine metal sieve. In a large bowl, whip cream until stiff and fold in cranberry puree; chill.
- Spoon fool into individual dessert dishes and decorate with grated orange peel, and fresh cranberries, if disired.
- Variation: Substitute with 1/2lb. plums. Cook plums with 3tbs. of water, omitting orange juice.
