How to make it

  • In a saucepan, combine cranberries, orang juice and sugar. Simmer about 10 minutes, until berries pop; cool.
  • When cranberries are cold, using a wooden spoon, press through a fine metal sieve. In a large bowl, whip cream until stiff and fold in cranberry puree; chill.
  • Spoon fool into individual dessert dishes and decorate with grated orange peel, and fresh cranberries, if disired.
  • Variation: Substitute with 1/2lb. plums. Cook plums with 3tbs. of water, omitting orange juice.
