Chewy Candy Bars

- 1 cup butter shopping list
- 2 cups brown sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 1 1/2 cups whole wheat flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon salt shopping list
- 2 cups rolled oats shopping list
- 250 ml can sweetened condensed milk shopping list
- 250 g light cream cheese (1 and 1/4 packages) shopping list
- 1 tsp vanilla shopping list
- 1 cup walnuts, finely chopped shopping list
- 2/3 cups semisweet chocolate chips shopping list
- 4-8 tablespoons milk shopping list
- 4 take-out foil tins with lids, 4 x 8. shopping list
How to make it
- Leave butter out overnight or soften in microwave on low for a minute. Chop the walnuts and set aside, ready to go. Butter the take-out tins. Preheat oven to 350 degrees.
- Beat together butter, sugar, egg and first amount of vanilla in a bowl.
- Add flour, soda, salt and oats, mixing well.
- Divide dough in to rough quarters and pack in to greased take-out tins. Set aside.
- Beat milk, cream cheese and second amount of vanilla together. Reserve 1/3 cup for icing.
- Spread remainder over bottom layer. I jiggle the back of my wooden spoon or spatula to gently move the cream cheese dollop in to the corners.
- Sprinkle nuts over top.
- Bake in oven for 25 minutes until set. Frost while hot.
- Start this icing as soon as the squares are in the oven.
- Melt the reserved cream cheese mixture and chocolate chips in a small saucepan over low heat,
- Add milk, one teaspoon at a time, until mixture will pour from a spoon in a drizzle.
- Drizzle or spread icing over hot bars as soon as they come from the oven.
- Cool.
- Cut in to 72 squares.
