Curried Chicken Recipe
This is a great curry recipe that is worth the work. Using the chicken thigh on the bone gives a heartier curry.

Ingredients
  • 1 Tbsp ghee
  • 1 Tbsp canola oil
  • 2 cups of finely chopped onions (2 large)
  • 3 inch piece of cinnamon
  • 3 Tbsp of finely chopped garlic
  • 2 Tbsp of chopped ginger
  • 1 large can of tomatoes
  • 1 Tbsp salt
  • 1/2 tsp black pepper
  • 1 tsp tumeric
  • 1 Tbsp ground cumin
  • 1 Tbsp ground coriander
  • 1 Tbsp garam masala
  • 1/2 tsp ground cayenne
  • 3 pounds chicken thighs, skinless, bone in
  • 1/2 cup chopped cilantro (stems too)

Directions
  1. In a large pan, heat the oil and ghee for 1 minute.
  2. Add cinnamon and onions and saute till onions are golden.
  3. If using a large can of tomatoes, blend for 30 seconds.
  4. Add the ginger, tomatoes, salt, pepper, tumeric, cumin, coriander, garam masala, and cayenne to the onions.
  5. Cook for at least 5 minutes to blend teh masala. Oil should separate from masala.
  6. Wash the thighs and pat dry. Use a knife and poke the meat.
  7. Add to masala mix and cook 10-15 minutes.
  8. Increase heat to medium high. When the curry starts to boil, reduce heat to medium, cover and cook 15 minutes.Make sure that the chicken is covered with masala.
  9. Check chicken for doness and remove to cool.
  10. Peel chicken from bone - wearing latex gloves keeps finger nails clean :-)
  11. Return chicken to curry. Heat on medium unti it starts to boil slightly and stir in cilantro.
  12. Divide curry into six bowls and serve.
