Curried Chicken

- 1 Tbsp ghee shopping list
- 1 Tbsp canola oil shopping list
- 2 cups of finely chopped onions (2 large) shopping list
- 3 inch piece of cinnamon shopping list
- 3 Tbsp of finely chopped garlic shopping list
- 2 Tbsp of chopped ginger shopping list
- 1 large can of tomatoes shopping list
- 1 Tbsp salt shopping list
- 1/2 tsp black pepper shopping list
- 1 tsp tumeric shopping list
- 1 Tbsp ground cumin shopping list
- 1 Tbsp ground coriander shopping list
- 1 Tbsp garam masala shopping list
- 1/2 tsp ground cayenne shopping list
- 3 pounds chicken thighs, skinless, bone in shopping list
- 1/2 cup chopped cilantro (stems too) shopping list
How to make it
- In a large pan, heat the oil and ghee for 1 minute.
- Add cinnamon and onions and saute till onions are golden.
- If using a large can of tomatoes, blend for 30 seconds.
- Add the ginger, tomatoes, salt, pepper, tumeric, cumin, coriander, garam masala, and cayenne to the onions.
- Cook for at least 5 minutes to blend teh masala. Oil should separate from masala.
- Wash the thighs and pat dry. Use a knife and poke the meat.
- Add to masala mix and cook 10-15 minutes.
- Increase heat to medium high. When the curry starts to boil, reduce heat to medium, cover and cook 15 minutes.Make sure that the chicken is covered with masala.
- Check chicken for doness and remove to cool.
- Peel chicken from bone - wearing latex gloves keeps finger nails clean :-)
- Return chicken to curry. Heat on medium unti it starts to boil slightly and stir in cilantro.
- Divide curry into six bowls and serve.
