How to make it

  • In a large pan, heat the oil and ghee for 1 minute.
  • Add cinnamon and onions and saute till onions are golden.
  • If using a large can of tomatoes, blend for 30 seconds.
  • Add the ginger, tomatoes, salt, pepper, tumeric, cumin, coriander, garam masala, and cayenne to the onions.
  • Cook for at least 5 minutes to blend teh masala. Oil should separate from masala.
  • Wash the thighs and pat dry. Use a knife and poke the meat.
  • Add to masala mix and cook 10-15 minutes.
  • Increase heat to medium high. When the curry starts to boil, reduce heat to medium, cover and cook 15 minutes.Make sure that the chicken is covered with masala.
  • Check chicken for doness and remove to cool.
  • Peel chicken from bone - wearing latex gloves keeps finger nails clean :-)
  • Return chicken to curry. Heat on medium unti it starts to boil slightly and stir in cilantro.
  • Divide curry into six bowls and serve.
