Lobster Chantilly with Papaya

- 2½ cups cooked lobster meat, chopped shopping list
- 1/4 cup mayonnaise shopping list
- 1 Tablespoon pimientos, minced shopping list
- 1 Tablespoon fresh parsley, minced shopping list
- 1 teaspoon fresh lemon juice shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1/2 cup heavy cream, whipped shopping list
- 1 ripe papaya, peeled, seeded and thinly sliced shopping list
- To garnish fresh mint sprigs shopping list
How to make it
- Combine mayonnaise, pimientos, lemon juice, parsley, salt, and pepper in a small bowl.
- Fold in whipped cream. Add lobster and papaya. Mix gently.
- Garnish with fresh mint. Serve immediately
