Chicken with basil

- 6 chicken thighs shopping list
- at least 6 basil leaves, enough to cover the surface of the chicken shopping list
- salt shopping list
How to make it
- Preheat your oven to 500 degrees.
- Line a roasting pan with foil.
- For each thigh, run your fingers under the chicken skin and lift slightly.
- Salt under the skin.
- Lay basil leaves between the skin and the meat, covering the meat in a single layer.
- Set in the pan, skin-side up.
- Roast 5-10 minutes, until the skin is browned and crisped and fat has started to cook out.
- Turn and roast another 10 minutes.
- Turn again to re-crisp the skin side.
- If the chicken cooks more quickly than this, reduce the times proportionally--you don't want to dry it out.
