How to make it

  • Preheat your oven to 500 degrees.
  • Line a roasting pan with foil.
  • For each thigh, run your fingers under the chicken skin and lift slightly.
  • Salt under the skin.
  • Lay basil leaves between the skin and the meat, covering the meat in a single layer.
  • Set in the pan, skin-side up.
  • Roast 5-10 minutes, until the skin is browned and crisped and fat has started to cook out.
  • Turn and roast another 10 minutes.
  • Turn again to re-crisp the skin side.
  • If the chicken cooks more quickly than this, reduce the times proportionally--you don't want to dry it out.
