Rich Fruit Cake

- All purpose flour - 2 cups shopping list
- cocoa powder - 1/2 cup shopping list
- Castor sugar - 1 cup shopping list
- caramel syrup - 1/2 cup shopping list
- rum - 2 tsp shopping list
- egg - 1 no (Well beaten) shopping list
- ghee (or) butter - 1/2 cup shopping list
- vanilla essence - few drops shopping list
- orange peel - 2 tsp (chopped) shopping list
- walnuts - 2 tsp shopping list
- cashew nuts - 2 tsp shopping list
- raisins - 2 tsp shopping list
- Tutty fruity - 2 tsp shopping list
- baking powder - 1 tsp shopping list
How to make it
- For Caramel syrup:
- Heat the pan, add 1/2 cup of sugar with 1 tsp of water and stir well in high flame until the sugar dissolves completely and appears to become a medium thick sauce like consistency.
- Method:
- 1) Shift the flour, baking powder, cocoa powder, sugar and mix well.
- 2) Mix the rum with the caramel syrup and beat well. Mix ghee (or) butter with the egg thoroughly until bubbles form on surface.
- 3) Now mix the caramel syrup with the egg mixture and beat well. Mix this with the flour thoroughly.
- 4) Put vanilla essence, orange peel, walnuts, cashews, raisins and tutty fruity in the batter. Mix well.
- 5) Preheat the oven at 250 degree. Grease the baking bowl with ghee (or) butter. Pour the batter in it and bake it for 12-15 minutes.
