How to make it

  • Boil water, add margarine and salt. Measure potatoes ahead of time and put in large bowl. Pour water mixture over potatoes. Let cool. Make a well in the center and add eggs (beaten) and flour. Knead very well with your hands until a nice dough forms. Sometimes it's easier to separate and make two smaller balls. Once you have your dough made, let it stand 10 minutes. Roll dough with your hands into long thin rolls and cut with knife into gnocchi shapes. When ready to eat, boil 15 minutes or until they float to the top of the pot.
