How to make it

  • Grease a 3 quart rectangular baking dish; set aside. Drain thawed spinach well, pressing out excess liquid; set aside. In a large bowl combine eggs and ricotta cheese; beat just until combined. Stir in milk, basil, salt, fennel seed, and pepper. Fold in spinach, tomatoes, mozzarella, green onions, and salami.
  • Spread mixture evenly into the prepared dish. Bake in a 325F oven for 30 minutes or until a knife inserted near center comes out clean.
  • Let stand for 10 minutes...

    This sounds wonderful! ^5!! I would substitute ham for salami, and add a few more tomatoes.

    Whoops! Sorry I 'missed' this one... This is my fave kinda dish.. I am a 'down home' cookin kinda gal, I do make other dishes it's just my 'forte' so to speak... Anyhoo dear, this looks wonderful! HIGH FIVE FORKS!!!
