How to make it

  • Prehead oven to 350.
  • In large bowl, cream the butter and cream cheese until fluffy. Beat in egg yolk and the extracts. In another bowl, combine the flour, baking powder and salt. Gradually add the flour mixture to the creamed mixture and mix well. Stir in 3 cups of the coconut. Cover and refrigerate the dough until easy to handle (about 30 minutes).
  • Roll dough in balls and roll in remaining coconut. Place on parchment lined cookie sheets.
  • Bake for 10-12 minutes or until lightly browned. Immediately press a chocolate kiss in the center of each cookie, sprinkle with the sugar. Cool on wire racks.
  • Enjoy!
