Beefy Braised With Mahogany Onions

- 2 pounds boneless chuck roast shopping list
- 1/4 pound bacon cut into slivers shopping list
- 4 medium onions very thinly sliced shopping list
- 5 garlic cloves chopped shopping list
- 1 teaspoon black pepper shopping list
- 1/2 teaspoon salt shopping list
How to make it
- Preheat oven to 325.
- Choose a heavy casserole large enough to accommodate meat snugly.
- Put bacon, sliced onions and garlic on bottom of pot.
- Top with meat and season with pepper.
- Cover tightly and cook 3 hours turning meat after first hour and every half hour after.
- Season with salt and more pepper if necessary.
- Slice meat very thin and pour juices and onion mixture over top and serve hot.
