How to make it

  • Preheat oven to 325.
  • Choose a heavy casserole large enough to accommodate meat snugly.
  • Put bacon, sliced onions and garlic on bottom of pot.
  • Top with meat and season with pepper.
  • Cover tightly and cook 3 hours turning meat after first hour and every half hour after.
  • Season with salt and more pepper if necessary.
  • Slice meat very thin and pour juices and onion mixture over top and serve hot.
