Applesauce Ambrosia Cake

- Bowl 1: shopping list
- 2 cups plain applesauce shopping list
- 1 cup raisins ( dark ) shopping list
- 1/2 cup chopped nuts ( walnuts ) shopping list
- 1 container candied fruit and peel , 16 oz ( see directions ) shopping list
- Bowl number 2: shopping list
- 3 cups flour shopping list
- 1 tsp baking soda shopping list
- 2 tsp baking powder shopping list
- 1/8 tsp ground nutmeg shopping list
- Bowl 3 shopping list
- 2 sticks softened butter shopping list
- 2 cups sugar shopping list
- 1/4 cup full fat plain yoghurt or sour cream shopping list
- 2 tsp vanilla shopping list
- Icing: optional shopping list
- 1/2 stick butter softened shopping list
- '1 1/2 cup powder sugar or as needed shopping list
- 1 tbs cream shopping list
- 1 tsp vanilla or tuitti fruiti extract shopping list
- coarse white sugar crstals shopping list
How to make it
- Note: preparation is atypical for this delcious cake!
- Use the metal blade in heavy duty food processor and pulse on and off to chop the fruit into smaller pieces.
- Do not over pulse or the fruit will turn to a paste!
- Place the chopped fruit in a bowl with the applesauce, nuts and raisins and set aside
- Bowl 2:
- Cream butter smooth and then cream in sugar till fluffy.
- Blend in the eggs and then the yoghurt, stir in the vanilla
- Bowl 3:
- sift the flour, baking powder and baking soda and nutmeg into a bowl
- Place all of the dry mixture into the creamed mixture.
- Add the fruit-applesauce mixture into the bowl
- With electric mixer slowly mix everything together until the mixture is well blended
- Place this mixture into a greased and floured tube pan lined with papered baking circle and grease paper.
- Bake 350F middle rack about 70 to 90 minutes or until cake tests done with a toohpick.
- Remove cake to rack to cool
- After 15 minutes, carefully invert to remove cake and then reinvert and cool completely
- When cool, wrap overnight to mellow flavors or freeze
- Frost or dust with powdered sugar on cooled cake
- Mix frosting inegrdients if desired and frost top of cak
- then sprinkle top with coarse crytal sugar if desired
