Roasted Pork Brie and Apricot Sandwich

- Good hard roll or french baguette shopping list
- roasted pork loin - thinly sliced shopping list
- Brie or Camenbert cheese - thinly sliced shopping list
- apricot jam (I used Polaner) shopping list
- cucumbers - thinly sliced shopping list
How to make it
- Slice pork thinly enough for a sandwich
- Slice cheese thinly enpugh for a sandwich
- Slice cucumbers thinly
- Slice baguette | roll long ways and remove inner bread
- Coat both sides of bread with apricot jam
- Layer pork, cheese and cucumber slices as desired
- Serve
- We had seom left-over pork loin and brie cheese from Christmas dinner yesterday. I bought a fresh french baguette from the bakery this morning. My son and I had this for lunch it was very tasty. We put the pork on the sandwich cold. The roasted pork has a very savory flavor to it. Combining that with the fresh cucumbers, creaminess of the cheese and sweetness of the jam made for a really nice treat.
