  • Slice pork thinly enough for a sandwich
  • Slice cheese thinly enpugh for a sandwich
  • Slice cucumbers thinly
  • Slice baguette | roll long ways and remove inner bread
  • Coat both sides of bread with apricot jam
  • Layer pork, cheese and cucumber slices as desired
  • Serve
  • We had seom left-over pork loin and brie cheese from Christmas dinner yesterday. I bought a fresh french baguette from the bakery this morning. My son and I had this for lunch it was very tasty. We put the pork on the sandwich cold. The roasted pork has a very savory flavor to it. Combining that with the fresh cucumbers, creaminess of the cheese and sweetness of the jam made for a really nice treat.
