Fructose Friendly Cheese And Bacon Muffins

- 4 rashers of short cut rindless bacon cooked and diced. shopping list
- 3 eggs (60gram) shopping list
- 50grams butter melted shopping list
- 2 tablespoons of chives (diced) or baby spinach (finely shredded) shopping list
- 2 1/2 cups wheat free, brown rice free flour. shopping list
- 1 cup grated low lactose cheese such as chedder, gouda or edam shopping list
- 200ml lactose free milk. shopping list
How to make it
- Preheat oven 190C
- Beat eggs in a bowl adding milk, butter & chives or spinach and mix.
- sift flour into a bowl add bacon and cheese. Stir in egg mix.
- Spoon into mini muffin pans and bake for 22mins or until golden.
- Note I make them mini muffins so my son can have small serves with other things to help with digestion, alternatively they make 10 to 12 normal sized muffins and these would need about 25mins in the oven.
