The Lady from Naples Red Sauce

- 3/4 Cup olive oil shopping list
- 2 cloves garlic, minced or crushed shopping list
- 1 1/2 tsp oregano shopping list
- 2 bay leaves shopping list
- 1 28oz can crushed tomatoes shopping list
- 1 28oz can chopped tomatoes shopping list
- 1 cup red wine shopping list
- 2 Tbsp honey shopping list
- salt & pepper to taste shopping list
- 1/ to 1/2 cup fresh basil or spinach, chopped shopping list
How to make it
- Add Olive Oil & garlic to heavy pot
- Bring heat to medium high,
- Saute, do not burn garlic
- Add oregano & bay leaves
- Cook 1-2 minutes
- Add tomatoes, wine & honey. Stir.
- Add black pepper (but not too much or it will make it bitter)
- Bring to a simmer
- Reduce heat to low & cover, leave lid slightly ajar, stirring occasionally
- Cook on low for an hour, taste & adjust.
- Add basil or spinach,
- Cook about another hour.
