How to make it

  • Add Olive Oil & garlic to heavy pot
  • Bring heat to medium high,
  • Saute, do not burn garlic
  • Add oregano & bay leaves
  • Cook 1-2 minutes
  • Add tomatoes, wine & honey. Stir.
  • Add black pepper (but not too much or it will make it bitter)
  • Bring to a simmer
  • Reduce heat to low & cover, leave lid slightly ajar, stirring occasionally
  • Cook on low for an hour, taste & adjust.
  • Add basil or spinach,
  • Cook about another hour.
