Peanut Butter And Banana Cookies

1/4 c margarine or Butter; softened shopping list
1 c Bananas; mashed shopping list
1 Egg white; whipped (next time I'm gonna try one or two whole eggs, I didn't see the benefit of using a whipped egg white) shopping list
1 ts vanilla shopping list
1/2 c peanut butter (I used almond butter and the nutty flavor did not come through) shopping list
1 1/2 c unbleached flour shopping list
1/2 c Granulated sugar shopping list
1/2 c Brown sugar; packed shopping list
1 ts baking soda shopping list

Preheat oven at 375. Prepare a baking sheet with cooking spray. In a mixing bowl, combine margarine, bananas, egg white, and vanilla. In another mixing bowl, combine flour, sugars, and baking soda. Mix wet ingredients with dry ingredients just until moistened. Drop by tablespoons 2" apart onto prepared baking sheet. Bake about 12 minutes or until lightly browned.
