How to make it

  • Brown ground beef in skillet. Add onion and cook until tranlusent. Remove from heat, add garlic and stir. Transfer to stock or soup pot. Add tomatoes with juice. Drain canned vegetables and add to pot. Add beef stock to your preference for soup thickness and simmer 15 minutes. Add potatoes and cook until tender. Season with salt and pepper to taste.
