How to make it

  • warm milk/cream in pan add lemongrass sugar and bring to boil
  • add teabags and infuse for 5 minutes with the lemon zest
  • remove from heat add gelatine and leave to cool
  • when cold (as gelatine separates from mix if still warm) pour into chilled dariole moulds
  • makes 20 plus servings..picture on left is the actually dish done by me
