How to make it

  • bring to boil in large pan water,dates and sugar until dates have dissolved to a pulp
  • add butter leave to cool stirring so often
  • when cooled to room temp add flour bicarb and flavourings then puree till smooth
  • pour into a deep tray lined with greaseproof paper tray must be 4 inch deep at least
  • bake in oven for 90 mins more or less at 180oc
  • peel off paper and cut into portions.

    Heres a quick toffee sauce...150g d/cream 180g muscovado sugar 4 tblspoons glucose,70g butter,bring to boil slowly until sugar is dissolved,then boil for ten minutes until a brown colour is reached stirring once or twice then remove from heat add 150ml of cream to the sauce to cool it down and its ready to serve

    keep an eye on this dish test with a knife in the centre as usual and make sure it comes out clean and it should be golden brown dark in color and best of all this freezes very well for a month wrapped in clingfilm
