Eggs in the oven

- 4 c broccolli. shopping list
- 12 cherry tomatoes halved. shopping list
- 4 big eggs. shopping list
- 1 c feta cheese crumbled. shopping list
- 1 c drained yoghurt. shopping list
- 1 ts dried oregano. shopping list
- 1 medium onion chopped. shopping list
- 2 cloves of garlic chopped. shopping list
- 6 tbs olive oil. shopping list
- pepper and salt to taste. shopping list
- parsley to garnish. shopping list
How to make it
- Bring enough water in a pan to a boil to cover the broccolli, add and cook for 6 min.
- Preheat oven to 180 C.
- Oil an ovenproof dish (Pyrex) with 1 tbs olive oil and devide the broccolli on the bottom.
- Add cherry tomatoes in between.
- Make 4 gaps and break eggs one by one in each gap.
- Mix yoghurt with onion, garlig and feta cheese and put with a spoon on the vegetables, take care not to cover the eggs.
- Sprinkle with oregano and taste with pepper and salt.
- Sprinkle with the rest of the olive oil and bake for 12 minutes or longer depending on how you like your eggs.
- Serve with cold beer and a warm baquette, for the kids add French fries.
