Chickpea And Cabbage Soup

- 1 15 oz. can garbanzo beans, drained and rinsed shopping list
- *I sometimes use Romano beans shopping list
- 6 cups water shopping list
- 4-6 large outer cabbage leaves, shredded shopping list
- 1 cup uncooked brown rice shopping list
- 4 slices swiss cheese shopping list
- 2 garlic cloves, finely chopped or minced shopping list
- 1/2 tsp dill, finely minced shopping list
- 1/2 tsp oregano, finely ground shopping list
- 1/2 tsp. thyme, finely ground shopping list
- 2 Tbsp. extra virgin olive oil shopping list
- 1 tsp. sea salt shopping list
- 1/4 tsp. ground white pepper shopping list
- a dash of hot sauce can replace the pepper shopping list
How to make it
- In a two-quart saucepan, add water and salt.
- Bring to a boil, add rice, and cook covered for 20 minutes.
- Then add remaining ingredients and bring to a second boil.
- Reduce heat and simmer for 25 additional minutes.
- Remove from heat and spoon into soup bowls.
- Lay one slice of Swiss cheese over each serving.
- Serves 4
