How to make it

  • In a two-quart saucepan, add water and salt.
  • Bring to a boil, add rice, and cook covered for 20 minutes.
  • Then add remaining ingredients and bring to a second boil.
  • Reduce heat and simmer for 25 additional minutes.
  • Remove from heat and spoon into soup bowls.
  • Lay one slice of Swiss cheese over each serving.
  • Serves 4
