How to make it

  • In a large saucepan, heat the oil and saute the onion and red bell pepper over medium heat for about 4 minutes. Add the bananas and the pineapple and orange juices. Simmer over the medium heat for 5 minutes, until the bananas are soft. Remove from the heat. Add lime juice, cilantro, habaneros or hot sauce, and 3 tbs of the Parmesan cheese, and mix well.
  • In boiling salted water, cook the fettuccini until al dente, about 8 to 10 minutes. Drain and place n a large bowl.
  • Add the chile mixture and mix well. Season with salt and pepper and garnish with the remaining grated Parmesan.
