Veggie Casserole

- 2 cans of green beans shopping list
- 2 cans of kernel corn shopping list
- 1 can of peas shopping list
- 1 large can of Veg-All shopping list
- 1 cup of mayo (low fat fine, just not Miracle Whip) shopping list
- 8oz shredded cheeze of your choice shopping list
- 1 med onion diced small (sometimes I use 3 tblsp minced onion for convenience with good results) shopping list
- (opt) 2 tblsp garlic pwdr shopping list
- salt and pepper to taste shopping list
- 1 roll of Ritz crackers shopping list
- 1 stick of butter shopping list
How to make it
- Strain vegetables and place in large mixing bowl, add mayo, cheeze, onion, and spices if so desired. The mayo should just barely coat the mixture, start small and add more for your taste.
- Melt stick of butter in micro, crunch Ritz crackers and add to melted butter. Stir well and set aside.
- Place veggie mixture in 13x9 ungreased baking pan. I always use glass so cooking time is relative. Top with butter/Ritz cracker mixture.
- Bake on 350deg for 30min or until crackers are light brown and mixture is bubbly.
