Potato and tomato frittata

- 4 small yams cut into chunks shopping list
- 1 tbsp garlic shopping list
- 1 small onion shopping list
- 1tbsp olive oil shopping list
- 1 large tomato cut into chunks shopping list
- 1 whole eggs shopping list
- 6 egg whites shopping list
- salt and pepper to taste shopping list
- 1 tsp dried basil shopping list
How to make it
- Boil the cubed yams until tender.
- Fry the garlic and onions in the oil until tender.
- Spread the yams and tomatoes evenly in the pan.
- Pour the egg mixture over top and season.
- Cook until the bottom is cooked (About 10 minutes)
- Then lift the edges and allow some of the uncooked egg mixture from the top to run down.
- Broil for 2-5 minute.
