South African Lamb Stew

- 700g diced lamb shopping list
- 2 medium onions, diced shopping list
- 3 gloves garlic, crushed shopping list
- 2 courgettes, sliced shopping list
- 2 tins chopped tomatoes shopping list
- 300ml lamb stock shopping list
- 1 fresh green chilli, de-seeded shopping list
- 1 tsp chilli powder shopping list
- 1/2 tsp chilli flakes shopping list
- 2 tbs tomato puree shopping list
- 1 tsp dried parsley shopping list
- olive oil shopping list
How to make it
- Dice onions and brown
- Add garlic, fresh chilli, and chilli powder
- In a separate pan, brown lamb in batches
- Add to onion, and add sliced courgette
- Add tinned tomatoes, tomato puree, and stock
- Bring to simmer, then cook on a low heat for 90 minutes
- Add parsley five minutes before serving
- Serve with basmati rice or naan bread
