How to make it

  • Dice onions and brown
  • Add garlic, fresh chilli, and chilli powder
  • In a separate pan, brown lamb in batches
  • Add to onion, and add sliced courgette
  • Add tinned tomatoes, tomato puree, and stock
  • Bring to simmer, then cook on a low heat for 90 minutes
  • Add parsley five minutes before serving
  • Serve with basmati rice or naan bread
