Bolognese Sauce

- 2 rashers of smoked streaky bacon shopping list
- 2 medium onions shopping list
- 2 cloves garlic shopping list
- 2 carrots shopping list
- 2 sticks of celery shopping list
- olive oil shopping list
- 2 heaped teaspoons dried oregano shopping list
- 500g minced beef shopping list
- 2 400g tins chopped tomatoes shopping list
- small bunch of fresh basil shopping list
- 400g-500g dried penne or spaghetti shopping list
- 100g parmesan cheese shopping list
How to make it
- TO MAKE SAUCE: Finely slice the bacon
- Peel and finely chop the onions, garlic, carrots and celery
- Place a large pan on a medium to high heat
- Add a olive oil, slice bacon, and the oregano. Cook and stir until the bacon is lightly golden
- Add the vegetables to the pan, and stir every 30 seconds for 7 minutes
- Stir in the minced meat and tinned tomatoes
- Fill both empty tins with water and add to the pan
- Stir in a good pinch of salt and pepper
- Pick the basil leaves and place in the fridge for later
- Finely chop the basil stalks and stir into the pan
- Bring to the boil, then turn down the heat and simmer with the lid on for 60 minutes. Stir every now and then
- Remove the bolognese sauce from the heat
- Finely grate the parmesan, stir half into the sauce
- Tear and stir in any large basil leaves, keep smaller ones for sprinkling over before serving
- Season with salt and pepper if needed
- TO MAKE PASTA: Bring a large pan of salted water to the boil
- Add pasta and stir, following the packet for boiling times
- Drain pasta in a colander
- Put drained pasta back into the pan, and add half the bolognese sauce to the cooked pasta, mixing well
- Add a little water to loosen, if required
- Divide between plates, spoon remaining sauce over the top
- Sprinkle over the rest of the parmesan and scatter with small basil leaves
