How to make it

  • TO MAKE SAUCE: Finely slice the bacon
  • Peel and finely chop the onions, garlic, carrots and celery
  • Place a large pan on a medium to high heat
  • Add a olive oil, slice bacon, and the oregano. Cook and stir until the bacon is lightly golden
  • Add the vegetables to the pan, and stir every 30 seconds for 7 minutes
  • Stir in the minced meat and tinned tomatoes
  • Fill both empty tins with water and add to the pan
  • Stir in a good pinch of salt and pepper
  • Pick the basil leaves and place in the fridge for later
  • Finely chop the basil stalks and stir into the pan
  • Bring to the boil, then turn down the heat and simmer with the lid on for 60 minutes. Stir every now and then
  • Remove the bolognese sauce from the heat
  • Finely grate the parmesan, stir half into the sauce
  • Tear and stir in any large basil leaves, keep smaller ones for sprinkling over before serving
  • Season with salt and pepper if needed
  • TO MAKE PASTA: Bring a large pan of salted water to the boil
  • Add pasta and stir, following the packet for boiling times
  • Drain pasta in a colander
  • Put drained pasta back into the pan, and add half the bolognese sauce to the cooked pasta, mixing well
  • Add a little water to loosen, if required
  • Divide between plates, spoon remaining sauce over the top
  • Sprinkle over the rest of the parmesan and scatter with small basil leaves
