Easy Tomato Basil Chicken

- 1/2 cup parmesan cheese shopping list
- 8 oz fresh mozzarella (I use pearls so I don't have to cut it up) shopping list
- chicken of your choice (I use 5lbs of leg quarters) shopping list
- 1 container of grape tomatoes shopping list
- 4tbsp minced garlic shopping list
- 1 bunch of fresh basil shopping list
- 1tbsp EVOO shopping list
How to make it
- Remove all skin and fat possible from chicken. I use leg quarters so this is really the only time consuming task. I am going to try boneless, skinless chicken breasts next time. If you do have to remove skin, kitchen scissors are a life saver!!
- Cut tomatoes into halves, chop up basil, and the mozz cheese needs to be in small pieces if you only have a block.
- In a large mixing bowl, mix EVOO, parm cheese, garlic, chopped tomatoes and basil, stir well (leave out mozz cheese until end).
- Place chicken in a large baking dish (do not layer the chicken as it will not cook thoroughly), pour mixture over chicken. This also cooks well in a crock pot. The chicken will have alot of juice in the pan so you do not have to worry about sticking.
- Bake on 450deg for 60min, or until chicken is cooked thouroughly. I add the mozzeralla cheese with 15min left to cook so it keeps its texture and shape.
