Minted Lemongrass Sorbet

- 3 stalks lemongrass shopping list
- 3 cups water shopping list
- 3/4 cup fresh mint leaves, wasted and patted dry shopping list
- 3/4 cup sugar shopping list
How to make it
- Thinly slice as much of the lemongrass stalks as possible, discarding the dried upper portion. In a saucepan, simmer water with sliced lemongrass, covered , 5 minutes. Add mint leaves and sugar, and simmer uncovered; until the sugar is dissolved, about 1 minute.
- Pour the mixture into a blender and blend (always using care when blending hot liquids); strain through a fine sieve into a bowl, pressing hard on the solids to get as much flavor as possible. Chill the syrup covered until cold. Freeze in an ice-cream maker according to manufacturers directions.
