How to make it

  • flatten pieces of pork as thin as you can and salt and pepper both sides
  • coat pork with flour
  • fry pork on medium high heat till golden on both sides frying pieces a few at a time
  • drain excess oil from pan
  • return all pieces of pork to pan and pour chicken stock over meat till
  • all pieces are just about covered
  • add the juice of one lemon
  • cover and simmer for 20 minutes on medium low heat
  • uncover, add capers simmer 2 minutes longer uncovered
