Baby Snapper Ceviche

While in Australia and New Zealand, I enjoyed the cuisine of Sidney, and the serenity of New Zealand. Sidney has the best darn steak - even better than Black Angus or USA Reserve Steaks.
Ingredients
- 60 g Fillet of Snappers sliced sashimi style into 3 pieces shopping list
- ½ Long green Chilli seeded removed and chopped shopping list
- ¼ small Green capsicum finely chopped shopping list
- ¼ red onion finely chopped shopping list
- ¼ small Lebanese cucumber finely chopped shopping list
- ¼ avocado finely chopped shopping list
- ½ Scud Chilli finely chopped shopping list
- ½ lime juiced shopping list
- ¼ tablespoon olive oil shopping list
- sea salt and freshly gound white pepper shopping list
How to make it
- Mix all dressing ingredients together and add the salt and pepper to taste.
- Just prior to serving, marinate the sliced snapper pieces in the additional lime juice for 30 seconds.
- Remove and pat dry.
