How to make it

  • Peel and quarter turnips.
  • In a large saucepan of boiling salted water cook turnips for 20 minutes then drain.
  • In a heavy saucepan bring milk and cream just to a simmer and keep hot over low heat.
  • In a heavy kettle cook onions in butter over medium low heat for one minute.
  • Add flour and cook 3 more minutes stirring as you cook.
  • Whisk in hot milk mixture and bring to boil over medium high heat whisking constantly.
  • Reduce heat to a simmer whisking occasionally for 15 minutes.
  • Pour sauce through a sieve into a large heavy saucepan and discard solids.
  • Stir into sauce white pepper nutmeg and salt to taste.
  • Return sauce to a simmer and add turnips.
  • Mash turnips with a potato masher.
  • Cook mixture covered over medium low heat for five minutes.
  • Serve with fresh ground pepper or parsley.
