Creamed Turnips

- 3 pounds medium turnips shopping list
- 1 large onion chopped shopping list
- 4 cups milk shopping list
- 1/2 cup heavy cream shopping list
- 3 tablespoons unsalted butter shopping list
- 1 tablespoon fresh thyme leaves shopping list
- 3/4 teaspoon salt shopping list
- 6 black peppercorns shopping list
- 6 whole cloves shopping list
- 2 bay leaves shopping list
- 3 tablespoons all purpose flour shopping list
- 1 teaspoon white pepper shopping list
- 1 teaspoon freshly grated nutmeg shopping list
How to make it
- Peel and quarter turnips.
- In a large saucepan of boiling salted water cook turnips for 20 minutes then drain.
- In a heavy saucepan bring milk and cream just to a simmer and keep hot over low heat.
- In a heavy kettle cook onions in butter over medium low heat for one minute.
- Add flour and cook 3 more minutes stirring as you cook.
- Whisk in hot milk mixture and bring to boil over medium high heat whisking constantly.
- Reduce heat to a simmer whisking occasionally for 15 minutes.
- Pour sauce through a sieve into a large heavy saucepan and discard solids.
- Stir into sauce white pepper nutmeg and salt to taste.
- Return sauce to a simmer and add turnips.
- Mash turnips with a potato masher.
- Cook mixture covered over medium low heat for five minutes.
- Serve with fresh ground pepper or parsley.
