How to make it

  • Chop vegetables coarsely and throw everything in the pot
  • Bring to a boil and simmer uncovered on med-low for 1.5 to 2 hours
  • Allow to cool
  • Pour through strainer and freeze in heavy duty 2 cup freezer bags
  • Yields approx 8 cups
  • Use as base for soups, sauces and stews
