Tomato Soup

- 1lb-2lb tomatoes, (or one tin of chopped toms) shopping list
- 1 carrot shopping list
- 1 onion shopping list
- 1 stick celery shopping list
- 2 tbsp olive iol shopping list
- a good pinch of sugar shopping list
- 1 tbsp tomato puree shopping list
- a jug of stock, (veg or chicken, either is fine) shopping list
- i like to add a tsp of cumin and galam masala (optional) shopping list
- salt n pepper shopping list
How to make it
- Peel and dice the veg
- fry in a pan in the oil
- when soft add tomato puree and fry for a few minutes (if using, add the spices at this stage)
- add the stock and tomatoes add salt n pepper and sugar and simmer for 20 minutes
- put in a blender and blend
- put back in pan and warm
- can be eaten like this for a rustic soup or can be put through a sieve
- serve with crusty bread
