How to make it

  • Peel and dice the veg
  • fry in a pan in the oil
  • when soft add tomato puree and fry for a few minutes (if using, add the spices at this stage)
  • add the stock and tomatoes add salt n pepper and sugar and simmer for 20 minutes
  • put in a blender and blend
  • put back in pan and warm
  • can be eaten like this for a rustic soup or can be put through a sieve
  • serve with crusty bread
