How to make it

  • In a sauce pan, melt 3 tablespoons of butter.
  • Add the shredded lettuce, top with 2 lbs. of tiny peas, onions, thyme and seasonings.
  • Mix well.
  • Cover tightly and cook on the barest of simmers, very low heat.
  • The moisture from the lettuce should be sufficient liquid to cook the peas. However you may find it necessary to add a spoonful of water to keep anything from sticking.
  • Fresh peas will take at least 30 to 40 minutes to be tender. I do the frozen in about 20 (but then I par blanch the onions so they are fork tender when cooking with the peas) A rock hard onion is awful with this dish.
  • At the end of cooking stir in the remaining two tablespoons of butter, taste for salt and pepper and serve to the delight of your guests.
