Little Peas With Lettuce

- 5 tablespoons of sweet unsalted butter, divided use shopping list
- 2 lbs. of peas, tiny fresh are best - but I've used frozen to some success shopping list
- 1 head of iceburg lettuce washed, shredded shopping list
- a dozen pearl onions, peeled (a pain) shopping list
- 3 sprigs of fresh thyme shopping list
- 1 1/2 teaspoons of sugar shopping list
- 1/4 teaspoon of salt shopping list
- 1/8 teaspoon of white pepper (I use black, I don't usually have white pepper hanging around) shopping list
How to make it
- In a sauce pan, melt 3 tablespoons of butter.
- Add the shredded lettuce, top with 2 lbs. of tiny peas, onions, thyme and seasonings.
- Mix well.
- Cover tightly and cook on the barest of simmers, very low heat.
- The moisture from the lettuce should be sufficient liquid to cook the peas. However you may find it necessary to add a spoonful of water to keep anything from sticking.
- Fresh peas will take at least 30 to 40 minutes to be tender. I do the frozen in about 20 (but then I par blanch the onions so they are fork tender when cooking with the peas) A rock hard onion is awful with this dish.
- At the end of cooking stir in the remaining two tablespoons of butter, taste for salt and pepper and serve to the delight of your guests.
