Warm Savoy and Salmon Slaw with Yogurt - Dill Dressing

- 1/3 cup nonfat yogurt (Source) shopping list
- 1 clove garlic, minced shopping list
- 2 tbsp minced red onion shopping list
- 3 tbsp finely diced english cucumber shopping list
- Zest of 1/2 lemon shopping list
- 1 tsp dried dill shopping list
- 1/2 tsp dried oregano shopping list
- dash paprika shopping list
- 6 oz savoy cabbage, shredded shopping list
- 1 can Gold Seal flaked "tuna-style" salmon, drained shopping list
- Coarsely ground black pepper shopping list
How to make it
- In a small bowl, combine yogurt, garlic, onion, cucumber, lemon zest, dill, oregano and paprika. Set aside.
- Heat a large, non-stick frying pan over high heat, spray with a light coat of non-stick spray.
- Add cabbage shreds and cook, stirring occasionally, 5 minutes. It should begin to brown and even blacken in areas.
- Add salmon and toss through to heat thoroughly. Remove to your serving bowl(s).
- Pour the yogurt mixture overtop of the cabbage mixture, toss lightly to coat.
- Garnish with pepper to taste and serve immediately.
