This is a very different very fruity and very unique soup bursting with great flavors.

Ingredients
  • 1 medium orange
  • 2 pounds rhubarb
  • 1 cup sugar
  • 4 cups water
  • 3 tablespoons sour cream

Directions
  1. Zest orange and mince zest then juice the orange.
  2. Remove string from rhubarb then chop rhubarb.
  3. Combine rhubarb, sugar, water, orange juice and half the zest in saucepan and bring to a boil.
  4. Turn heat to medium and cook 15 minutes.
  5. Chill and serve.
