How to make it

  • Simmer the watercress, spianch and tarragon in water a few mins to soften
  • drain, rinse in cold water
  • Press out water and mash into a pulp
  • Add to mayo with lemon juice
  • Blend well and chill
  • Cut unpeeled cucumbers in half lengthwise
  • Place in pan, cover with water, simmer 2 minutes
  • Remove , drain and cool in ice water
  • drain very well
  • When cold hollow out centers leaving a shell about 1/4 inch thick
  • Fill the hollows with the diced beans and cover with the chilled dressing and garnish with the chives
