Green Goddess cucumber salad

- 2 medium cucumbers shopping list
- 1/2 cup cooked green beans diced shopping list
- fresh chopped chives ( garnish ) shopping list
- Dressing: shopping list
- 6 spring watercress shopping list
- 6 spinach leaves shopping list
- 6 stalks of fresh tarragon shopping list
- 2/3 cup mayonaisse shopping list
- 1 tsp lemon juice shopping list
- salt and pepper to taste shopping list
How to make it
- Simmer the watercress, spianch and tarragon in water a few mins to soften
- drain, rinse in cold water
- Press out water and mash into a pulp
- Add to mayo with lemon juice
- Blend well and chill
- Cut unpeeled cucumbers in half lengthwise
- Place in pan, cover with water, simmer 2 minutes
- Remove , drain and cool in ice water
- drain very well
- When cold hollow out centers leaving a shell about 1/4 inch thick
- Fill the hollows with the diced beans and cover with the chilled dressing and garnish with the chives
