How to make it

  • Drain tofu well
  • Cut into 8 equal slices
  • pat dry gently
  • place slices in a flat dish
  • sprinkle evenly with the garam masal powder, salt and pepper to taste
  • Note that tofu is quite bland so don't be afraid to season liberally.
  • Drizzle over the oil and turn to coat.
  • Make the batter
  • Fork beat the eggs in one dish
  • Add the soy protein ( or flour ) in another dish .
  • Heat oil ( few tabs ) in skillet over medium high heat
  • Dip tofu in egg, then coat in the soy powder
  • Fry in the pan golden , turning once on each side
  • If necessary wipe out pan with a paper towel between fresh batches and add oil and fry remaining tofu.
  • Make sauce ( multiply as needed ) add spice, salt, pepper, garlic and parsley to yogurt and mix well
  • Puffs: with the excess batter, mix egg and powder , serason to taste and stir to combine.
  • Add some water and stir to make a pancake type of batter
  • Drop by spoonfuls in hot pan and fry golden, these go very quickly )
  • Serve with tofu and sauce
