Salt and Pepper Squid With Lime Dipping Sauce

- 1 cup mayonnaise shopping list
- finely grated zest and juice of 2 limes shopping list
- 2 tablespoon sweet chilli sauce shopping list
- 2/3 cup each plain flour and corn flour shopping list
- 2 tablespoons sea salt flakes shopping list
- 1 tablespoon cracked black pepper shopping list
- 1 1/3 cups chilled soda water shopping list
- 700g frozen tenderised squid rings shopping list
How to make it
- To make the dipping sauce, combine mayonnaise, lime juice and zest and sweet chilli sauce. Set aside. Heat 2cm of vegetable oil to 190 C in a deep saucepan.
- Mix together the flours and salt and pepper in a large bowl. Use a whisk to gradually mix in the soda water to form a slightly lumpy batter.
- When the oil is at temperature, work in batches to lightly coat the frozen squid in batter before placing in oil. Fry the squid, turning occasionally, for 2 min or until golden and crispy.
- Remove squid with slotted spoon or tongs, drain on paper towel. Serve with salad, dipping sauce and lemon wedges.
