How to make it

  • To make the dipping sauce, combine mayonnaise, lime juice and zest and sweet chilli sauce. Set aside. Heat 2cm of vegetable oil to 190 C in a deep saucepan.
  • Mix together the flours and salt and pepper in a large bowl. Use a whisk to gradually mix in the soda water to form a slightly lumpy batter.
  • When the oil is at temperature, work in batches to lightly coat the frozen squid in batter before placing in oil. Fry the squid, turning occasionally, for 2 min or until golden and crispy.
  • Remove squid with slotted spoon or tongs, drain on paper towel. Serve with salad, dipping sauce and lemon wedges.
