How to make it

  • Grease a deep 22cm baba pan.
  • Use an electric mixer to beat butter, sugar and vanilla in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Transfer to a large bowl.
  • Stir in banana and cream, then sifted flour and almond meal. Gently fold in raspberries. Spoon mixture into pan.
  • Cook in a moderate oven (180C) for about 50 minutes, or until cooked when tested. Stand cake in pan for 10 minutes, then turn out onto a wire rack to cool.
  • Serve cake dusted with icing sugar.
