Raspberry Almond amp Banana Cake

- 200g butter, at room temperature shopping list
- 1 cup caster sugar shopping list
- 1 tsp vanilla essence shopping list
- 2 eggs shopping list
- 1 large ripe banana, mashed shopping list
- 1/2 cup sour cream shopping list
- 2 1/2 cups self-raising flour shopping list
- 1/2 cup almond meal shopping list
- 1 1/2 cups frozen raspberries shopping list
- icing sugar mixture, to decorate shopping list
How to make it
- Grease a deep 22cm baba pan.
- Use an electric mixer to beat butter, sugar and vanilla in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Transfer to a large bowl.
- Stir in banana and cream, then sifted flour and almond meal. Gently fold in raspberries. Spoon mixture into pan.
- Cook in a moderate oven (180C) for about 50 minutes, or until cooked when tested. Stand cake in pan for 10 minutes, then turn out onto a wire rack to cool.
- Serve cake dusted with icing sugar.
