How to make it

  • Gently fry the onion in the olive oil for a few minutes till soft
  • Add the garlic and fry gently for another minute or two
  • Add the rest of the ingrediants, bring to the boil, cover and simmer for 20 minutes (or until the aubergine is cooked but not slimey!)
  • Easy!
