Ingredients
  • 1/2 lb. of lean ground beef
  • 1 diced onion
  • 4 diced potato
  • 1 (16 oz) package of frozen mixed vegetables
  • 1 (46 fluid oz) can of tomato-vegetable juice cocktail
  • salt and pepper to taste

Directions
  1. First you brown beef in a large pan.
  2. Next you drain off fat.
  3. Then add juice, onion, potatoes, and veggies to the pot.
  4. Let this boil then simmer mixture until potatoes are tender.
  5. Salt and pepper as needed.
  6. Ladle and serve!
